Cookies and Cream Ice Cream Cake

Ingredients
  

Cake Base
  • 1 package chocolate sandwich cookies crushed
  • 4 tablespoons unsalted butter melted
Ice Cream Layer
  • 4 cups cookies and cream ice cream softened
  • 1 cup whipped cream for topping
  • 1 cup chocolate sandwich cookies coarsely chopped for mixing

Method
 

Prepare Cake Base
  1. In a mixing bowl, combine crushed chocolate sandwich cookies and melted butter. Mix until well combined.
  2. Press the mixture firmly into the bottom of a 9-inch springform pan to form the cake base.
Layer Ice Cream
  1. Spread half of the softened cookies and cream ice cream over the cookie crust in the springform pan.
  2. Sprinkle half of the chopped chocolate sandwich cookies over the ice cream layer.
  3. Repeat with the remaining ice cream and chopped cookies, smoothing the top.
Freeze
  1. Cover the springform pan with plastic wrap and freeze for at least 4 hours or until firm.
Serve
  1. Remove the cake from the freezer and carefully release it from the springform pan.
  2. Top with whipped cream and additional crushed cookies if desired before slicing and serving.

Notes
