Ingredients
  

Pasta
  • 8 oz pasta (fusilli or penne) cooked and cooled
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup bell pepper diced
  • 1/2 cup red onion finely chopped
Dressing
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dijon mustard
  • 1 clove garlic minced
  • 1 tsp salt
  • 1/2 tsp black pepper
Herbs
  • 1/4 cup fresh parsley chopped
  • 1/4 cup fresh basil chopped

Method
 

Prepare the Pasta
  1. Cook the pasta according to package instructions. Drain and rinse under cold water to cool.
Mix the Salad
  1. In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, bell pepper, and red onion.
Make the Dressing
  1. In a small bowl, whisk together olive oil, red wine vinegar, dijon mustard, minced garlic, salt, and black pepper.
Combine
  1. Pour the dressing over the pasta salad and toss to combine. Add chopped parsley and basil, and mix well.
Chill and Serve
  1. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
