Ingredients
  

Vegetables
  • 1 medium Zucchini sliced
  • 1 medium Red Bell Pepper sliced
  • 1 medium Yellow Bell Pepper sliced
  • 1 medium Red Onion sliced
  • 1 cup Cherry Tomatoes halved
Marinade
  • 1/4 cup Olive Oil
  • 2 tablespoons Lemon Juice
  • 2 tablespoons Lime Juice
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1 teaspoon Dried Oregano
Toppings
  • 1 avocado Avocado sliced
  • 1/4 cup Feta Cheese crumbled
  • 1/4 cup Fresh Cilantro chopped

Method
 

Prepare the Marinade
  1. In a mixing bowl, combine olive oil, lemon juice, lime juice, garlic powder, salt, black pepper, and dried oregano. Whisk until well combined.
Marinate the Vegetables
  1. Add the sliced zucchini, red bell pepper, yellow bell pepper, red onion, and cherry tomatoes to the marinade. Toss to coat and let sit for at least 10 minutes.
Grill the Vegetables
  1. Preheat the grill to medium-high heat. Grill the marinated vegetables for about 5-7 minutes on each side, or until tender and slightly charred.
Assemble the Bowls
  1. In serving bowls, layer the grilled vegetables, sliced avocado, crumbled feta cheese, and chopped cilantro. Drizzle with any remaining marinade if desired.
