Ingredients
  

Churro Dough
  • 1 cup water boiling
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon salt
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 teaspoon vanilla extract
For Frying
  • 2 cups vegetable oil for frying
Cinnamon Sugar Coating
  • 1/2 cup granulated sugar
  • 1 tablespoon ground cinnamon
Chocolate Sauce
  • 1 cup dark chocolate chopped
  • 1/2 cup heavy cream

Method
 

Prepare the Churro Dough
  1. In a saucepan, combine boiling water, sugar, and salt. Stir in flour until a dough forms.
  2. Remove from heat and let cool slightly. Beat in eggs and vanilla until smooth.
Fry the Churros
  1. Heat vegetable oil in a large pot over medium heat.
  2. Transfer dough to a piping bag fitted with a star tip. Pipe 4-6 inch strips into hot oil.
  3. Fry until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.
Coat and Serve
  1. Mix sugar and cinnamon in a bowl. Roll churros in the mixture to coat.
  2. For the chocolate sauce, heat heavy cream until simmering, then pour over chopped chocolate. Stir until smooth.
  3. Serve churros warm with chocolate sauce for dipping.

Notes

Churros are best served fresh and warm. You can also add a pinch of nutmeg to the cinnamon sugar for extra flavor.
