Prepare the Churro Dough
- In a saucepan, combine boiling water, sugar, and salt. Stir in flour until a dough forms.
- Remove from heat and let cool slightly. Beat in eggs and vanilla until smooth.
Fry the Churros
- Heat vegetable oil in a large pot over medium heat.
- Transfer dough to a piping bag fitted with a star tip. Pipe 4-6 inch strips into hot oil.
- Fry until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.
Coat and Serve
- Mix sugar and cinnamon in a bowl. Roll churros in the mixture to coat.
- For the chocolate sauce, heat heavy cream until simmering, then pour over chopped chocolate. Stir until smooth.
- Serve churros warm with chocolate sauce for dipping.
