Ingredients
  

Orange Peel
  • 2 large oranges zested and peeled
  • 1 cup granulated sugar for candying
  • 1 cup water for candying
Chocolate Coating
  • 8 ounces dark chocolate chopped
  • 1 tablespoon coconut oil optional, for smoothness

Method
 

Prepare Orange Peel
  1. Using a peeler, remove the outer peel from the oranges, avoiding the white pith as much as possible.
  2. Cut the peel into strips about 1/2 inch wide.
  3. In a saucepan, combine the water and sugar, and bring to a boil. Add the orange peel and simmer for about 45 minutes until tender.
  4. Remove the peel from the syrup and place on a baking sheet lined with parchment paper to dry for several hours or overnight.
Dip in Chocolate
  1. Melt the dark chocolate and coconut oil in a double boiler over simmering water, stirring until smooth.
  2. Dip each piece of dried orange peel into the melted chocolate, allowing excess to drip off.
  3. Place the dipped orange peel back on the parchment paper and let it cool until the chocolate hardens.
