Prepare Orange Peel
- Using a peeler, remove the outer peel from the oranges, avoiding the white pith as much as possible.
- Cut the peel into strips about 1/2 inch wide.
- In a saucepan, combine the water and sugar, and bring to a boil. Add the orange peel and simmer for about 45 minutes until tender.
- Remove the peel from the syrup and place on a baking sheet lined with parchment paper to dry for several hours or overnight.
Dip in Chocolate
- Melt the dark chocolate and coconut oil in a double boiler over simmering water, stirring until smooth.
- Dip each piece of dried orange peel into the melted chocolate, allowing excess to drip off.
- Place the dipped orange peel back on the parchment paper and let it cool until the chocolate hardens.
