Ingredients
  

Chicken Marinade
  • 1 lb boneless, skinless chicken thighs
  • 2 tbsp olive oil
  • 2 tbsp chipotle peppers in adobo sauce minced
  • 1 tbsp lime juice
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp salt
  • 1/2 tsp black pepper
Toppings
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro chopped

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine olive oil, chipotle peppers, lime juice, garlic powder, cumin, salt, and black pepper.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.
Cook the Chicken
  1. Heat a skillet over medium-high heat. Remove chicken from marinade and place in the skillet.
  2. Cook for 5-7 minutes on each side, or until the chicken is cooked through and has a nice char.
  3. Remove from heat and let rest for a few minutes before slicing.
Assemble the Dish
  1. Serve the sliced chipotle chicken on tortillas or over a bed of lettuce. Top with shredded lettuce, diced tomatoes, cheese, sour cream, and cilantro.
