Marinate the Chicken
- In a mixing bowl, combine olive oil, chipotle peppers, lime juice, garlic powder, cumin, salt, and black pepper.
- Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.
Cook the Chicken
- Heat a skillet over medium-high heat. Remove chicken from marinade and place in the skillet.
- Cook for 5-7 minutes on each side, or until the chicken is cooked through and has a nice char.
- Remove from heat and let rest for a few minutes before slicing.
Assemble the Dish
- Serve the sliced chipotle chicken on tortillas or over a bed of lettuce. Top with shredded lettuce, diced tomatoes, cheese, sour cream, and cilantro.
