Ingredients
  

Chickpeas
  • 2 cans chickpeas drained and rinsed
Spices
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Vegetables
  • 1 cup corn fresh or frozen
  • 1 cup cherry tomatoes halved
  • 1 cup red onion diced
  • 1 cup bell pepper diced
  • 1 cup avocado sliced
Dressing
  • 1 tablespoon lime juice
  • 1 tablespoon cilantro chopped
Toppings
  • 1/2 cup sour cream or vegan alternative
  • 1/4 cup feta cheese optional

Method
 

Prepare the Chickpeas
  1. In a skillet, heat olive oil over medium heat. Add the drained chickpeas and spices (cumin, smoked paprika, garlic powder, salt, and pepper). Cook for about 10 minutes, stirring occasionally, until chickpeas are slightly crispy.
Prepare the Vegetables
  1. In a mixing bowl, combine corn, cherry tomatoes, red onion, and bell pepper. Toss with lime juice and chopped cilantro.
Assemble the Bowls
  1. In serving bowls, layer the spiced chickpeas, vegetable mixture, and top with sliced avocado. Add sour cream and feta cheese if desired.
