Ingredients
  

Chicken Salad
  • 2 cups cooked chicken shredded
  • 1 cup celery diced
  • 1/2 cup red grapes halved
  • 1/4 cup almonds sliced
  • 1/2 cup Greek yogurt as a dressing
  • 1 tablespoon honey
  • 1 teaspoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Lettuce Cups
  • 8 leaves Romaine lettuce or butter lettuce

Method
 

Prepare Chicken Salad
  1. In a mixing bowl, combine shredded chicken, diced celery, halved grapes, and sliced almonds.
  2. In a separate bowl, mix Greek yogurt, honey, lemon juice, salt, and black pepper until smooth.
  3. Pour the yogurt mixture over the chicken mixture and stir until well combined.
Assemble Cups
  1. Take a lettuce leaf and spoon a generous amount of chicken salad into the center.
  2. Repeat with remaining leaves and chicken salad.
  3. Serve immediately on a platter.
