Ingredients
  

Chicken Salad
  • 2 cups cooked chicken shredded or diced
  • 1/2 cup mayonnaise or Greek yogurt for a lighter option
  • 1 cup celery diced
  • 1/2 cup red grapes halved
  • 1/4 cup almonds sliced or chopped
  • 1 teaspoon dijon mustard
  • 1 teaspoon lemon juice
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste
Serving Cups
  • 8 leaves romaine lettuce or butter lettuce

Method
 

Prepare Chicken Salad
  1. In a mixing bowl, combine the cooked chicken, mayonnaise, celery, grapes, almonds, dijon mustard, lemon juice, salt, and pepper. Mix until well combined.
  2. Taste and adjust seasoning if necessary.
Assemble Cups
  1. Take a lettuce leaf and spoon a generous amount of the chicken salad into the center.
  2. Repeat with remaining leaves and chicken salad.
  3. Serve immediately on a platter.
