Ingredients
  

Chicken Salad
  • 2 cups cooked chicken shredded or diced
  • 1 cup mayonnaise adjust to taste
  • 1 cup celery diced
  • 1/2 cup red grapes halved
  • 1/4 cup almonds sliced or chopped
  • 1 teaspoon dijon mustard optional
  • 1 teaspoon lemon juice freshly squeezed
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste
Croissant
  • 4 croissants freshly baked
Optional Garnishes
  • 4 leaves lettuce for serving
  • 4 slices tomato for serving

Method
 

Prepare Chicken Salad
  1. In a mixing bowl, combine the cooked chicken, mayonnaise, celery, grapes, almonds, dijon mustard, lemon juice, salt, and black pepper. Mix until well combined.
  2. Taste and adjust seasoning if necessary.
Assemble Sandwiches
  1. Slice the croissants in half horizontally.
  2. Spoon a generous amount of chicken salad onto the bottom half of each croissant.
  3. Add lettuce and tomato slices if desired, then place the top half of the croissant on the sandwich.
Serve
  1. Arrange the sandwiches on a serving platter and serve immediately.
