Cook Chicken and Vegetables
- Heat olive oil in a skillet over medium-high heat. Add sliced chicken and cook until browned and cooked through, about 5-7 minutes.
- Add sliced bell pepper and onion to the skillet. Sprinkle with chili powder, cumin, paprika, and garlic powder. Cook for an additional 5 minutes until vegetables are tender.
Assemble Bowls
- In serving bowls, layer cooked rice, black beans, corn, and the chicken and vegetable mixture.
- Top each bowl with salsa, shredded cheese, sour cream, and sliced avocado.
