Ingredients
  

Pasta and Chicken
  • 8 oz elbow macaroni
  • 2 cups cooked chicken, shredded Use rotisserie chicken for convenience.
Cheese Sauce
  • 4 tbsp butter
  • 1/4 cup all-purpose flour
  • 2 cups milk Whole milk preferred.
  • 2 cups cheddar cheese, shredded Use sharp cheddar for more flavor.
  • 1 cup mozzarella cheese, shredded
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
Topping
  • 1/2 cup bread crumbs Optional for crunch.
  • 2 tbsp parmesan cheese, grated

Method
 

Cook Pasta
  1. Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.
Make Cheese Sauce
  1. In a skillet, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes until lightly golden.
  2. Gradually whisk in the milk, stirring constantly until the mixture thickens.
  3. Remove from heat and stir in the cheddar and mozzarella cheeses until melted and smooth. Add garlic powder, onion powder, salt, and pepper.
Combine and Bake
  1. In a large bowl, combine the cooked macaroni, shredded chicken, and cheese sauce. Mix well.
  2. Transfer the mixture to a greased baking dish. If using, sprinkle bread crumbs and parmesan cheese on top.
  3. Bake in a preheated oven at 350°F (175°C) for 20 minutes or until bubbly and golden on top.
