Ingredients
  

Filling
  • 2 cups cooked chicken, shredded
  • 1 cup fresh cherries, pitted and halved
  • 1 cup cucumber, julienned
  • 1 cup carrots, julienned
  • 1/4 cup fresh mint leaves
  • 1/4 cup fresh cilantro leaves
Rice Paper
  • 8 sheets rice paper wrappers
Dipping Sauce
  • 1/4 cup soy sauce
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1 teaspoon rice vinegar

Method
 

Prepare the Filling
  1. In a large bowl, combine the shredded chicken, cherries, cucumber, carrots, mint, and cilantro. Mix well.
Soak Rice Paper
  1. Fill a large bowl with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until soft. Remove and lay flat on a clean surface.
Assemble Rolls
  1. Place a small amount of the filling mixture in the center of the rice paper. Fold the sides over the filling, then roll from the bottom up to enclose the filling. Repeat with remaining wrappers and filling.
Make Dipping Sauce
  1. In a small bowl, whisk together the soy sauce, honey, sesame oil, and rice vinegar until well combined.
Serve
  1. Arrange the rice paper rolls on a serving platter and serve with the dipping sauce.

These rolls are best served fresh. You can customize the filling with other ingredients like shrimp or tofu as desired.
