Prepare the Filling
- In a mixing bowl, combine the shredded chicken, chopped cherries, cheddar cheese, olive oil, salt, and black pepper. Mix well.
Assemble Quesadillas
- Heat a skillet over medium heat. Place one tortilla in the skillet and spread a portion of the filling over half of the tortilla.
- Fold the tortilla over to cover the filling and cook for about 2-3 minutes on each side until golden brown and the cheese is melted.
- Remove from skillet and repeat with remaining tortillas and filling.
Serve
- Cut the quesadillas into bite-sized pieces and serve warm.
