Prepare the Filling
- In a mixing bowl, combine the cooked chicken, chopped cherries, cheddar cheese, cumin, salt, and pepper. Mix well.
Assemble the Quesadillas
- Heat a skillet over medium heat and add 1 tablespoon of olive oil.
- Place one tortilla in the skillet, spread a portion of the filling on one half, and fold the tortilla over.
- Cook for about 3-4 minutes on each side until golden brown and the cheese is melted.
- Remove from skillet and repeat with remaining tortillas and filling.
Serve
- Cut the quesadillas into bite-sized pieces and serve warm.
