Ingredients
  

Fruits
  • 2 cups fresh blueberries
  • 1 large ripe mango peeled and diced
  • 1 cup baby spinach optional
  • 1 medium avocado diced
Dressing
  • 2 tablespoons honey
  • 1 tablespoon lime juice freshly squeezed
  • 1 tablespoon olive oil
  • a pinch salt
  • a pinch black pepper

Method
 

Prepare the Ingredients
  1. Wash the blueberries thoroughly and set aside.
  2. Peel and dice the mango into small cubes.
  3. Dice the avocado and set aside.
  4. If using, rinse the baby spinach and pat dry.
Make the Dressing
  1. In a small bowl, whisk together honey, lime juice, olive oil, salt, and black pepper until well combined.
Assemble the Salad
  1. In a large mixing bowl, combine the blueberries, diced mango, avocado, and spinach (if using).
  2. Drizzle the dressing over the salad and toss gently to combine.
  3. Serve immediately and enjoy!
