Ingredients
  

Salad Base
  • 6 cups fresh spinach washed and dried
  • 1 cup blueberries fresh or frozen
  • 1/2 cup feta cheese crumbled
  • 1/4 cup walnuts chopped
Vinaigrette
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 1 pinch salt
  • 1 pinch black pepper

Method
 

Prepare the Salad
  1. In a large salad bowl, combine the fresh spinach, blueberries, feta cheese, and walnuts.
Make the Vinaigrette
  1. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and black pepper until well combined.
Combine and Serve
  1. Drizzle the vinaigrette over the salad and toss gently to combine. Serve immediately.
