  • 4 cups fresh spinach washed and dried
  • 1 cup blueberries fresh or frozen
  • 1/2 cup feta cheese crumbled
  • 1/4 cup red onion thinly sliced
  • 1/4 cup walnuts chopped
Vinaigrette Dressing
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the spinach, blueberries, feta cheese, red onion, and walnuts.
Make the Vinaigrette
  1. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper until well combined.
Combine and Serve
  1. Drizzle the vinaigrette over the salad and toss gently to combine. Serve immediately on salad plates.
