Roasted Vegetables
  • 1 medium Zucchini sliced
  • 1 medium Red Bell Pepper diced
  • 1 medium Red Onion diced
  • 2 cups Cherry Tomatoes halved
  • 2 tablespoons Olive Oil for roasting
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Garlic Powder
Wrap Bowl Base
  • 4 cups Mixed Greens
  • 1 cup Cooked Quinoa
Toppings
  • 1 cup Fresh Blueberries
  • 1/4 cup Feta Cheese crumbled
  • 1 avocado Avocado sliced
  • 2 tablespoons Balsamic Glaze for drizzling

Method
 

Roast the Vegetables
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine zucchini, red bell pepper, red onion, and cherry tomatoes.
  3. Drizzle with olive oil, salt, black pepper, and garlic powder. Toss to coat evenly.
  4. Spread the vegetables on a baking sheet in a single layer.
  5. Roast in the preheated oven for 25-30 minutes, until tender and slightly caramelized.
Assemble the Wrap Bowls
  1. In each bowl, layer mixed greens and cooked quinoa as the base.
  2. Top with the roasted vegetables, fresh blueberries, sliced avocado, and crumbled feta cheese.
  3. Drizzle with balsamic glaze before serving.
