Ingredients
  

Chicken Filling
  • 2 cups Cooked chicken, shredded Rotisserie chicken works well.
  • 1 cup Blueberries Fresh or frozen.
  • 1 cup Shredded cheese Cheddar or Monterey Jack.
  • 1 tablespoon Olive oil For cooking.
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
Flatbreads
  • 4 pieces Flatbreads Store-bought or homemade.
Toppings
  • 1 cup Sour cream For serving.
  • 1 tablespoon Chopped fresh cilantro Optional.

Method
 

Prepare the Filling
  1. In a skillet, heat olive oil over medium heat. Add shredded chicken, cumin, salt, and pepper. Stir to combine and heat through.
  2. Gently fold in the blueberries and cook for an additional 2 minutes until warmed.
Assemble the Quesadillas
  1. Place a flatbread on a clean surface. Spoon a portion of the chicken and blueberry mixture onto one half of the flatbread.
  2. Sprinkle shredded cheese over the filling and fold the flatbread in half.
Cook the Quesadillas
  1. In the same skillet, place the folded flatbread and cook for about 3-4 minutes on each side until golden brown and the cheese is melted.
Serve
  1. Remove from skillet, cut into wedges, and serve with sour cream and cilantro if desired.
