BBQ Chicken Mac and Cheese

Ingredients
  

Pasta
  • 8 oz elbow macaroni
Chicken
  • 2 cups cooked chicken, shredded BBQ flavored
Cheese Sauce
  • 4 tbsp butter
  • 1/4 cup all-purpose flour
  • 2 cups milk whole or 2%
  • 2 cups cheddar cheese, shredded
  • 1 cup monterey jack cheese, shredded
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
Topping
  • 1/2 cup panko breadcrumbs
  • 2 tbsp parmesan cheese, grated
  • 1 tbsp olive oil
BBQ Sauce
  • 1/2 cup BBQ sauce your favorite brand

Method
 

Cook Pasta
  1. In a large pot, bring salted water to a boil and cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
Make Cheese Sauce
  1. In a skillet, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes until golden.
  2. Gradually whisk in the milk, stirring constantly until the mixture thickens.
  3. Add the cheddar and monterey jack cheeses, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir until the cheese is melted and smooth.
Combine Ingredients
  1. In a large bowl, combine the cooked macaroni, shredded chicken, BBQ sauce, and cheese sauce. Mix until well combined.
Prepare for Baking
  1. Preheat the oven to 350°F (175°C). Transfer the mixture to a greased baking dish.
  2. In a small bowl, mix the panko breadcrumbs, parmesan cheese, and olive oil. Sprinkle over the mac and cheese mixture.
Bake
  1. Bake in the preheated oven for 20-25 minutes, or until the top is golden and bubbly.
Serve
