  • 2 medium ripe avocados diced
  • 1 large ripe mango diced
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh cilantro chopped
Dressing
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon honey optional
  • salt to taste
  • pepper to taste

Method
 

Prepare the Ingredients
  1. In a mixing bowl, combine diced avocados, mango, cherry tomatoes, cucumber, red onion, and cilantro.
Make the Dressing
  1. In a small bowl, whisk together olive oil, lime juice, honey, salt, and pepper until well combined.
Combine and Serve
