Ingredients
  

Taco Filling
  • 2 medium Avocados ripe, diced
  • 1 can Black Beans drained and rinsed
  • 1 cup Corn canned or frozen
  • 1 cup Cherry Tomatoes halved
  • 1/4 cup Red Onion finely chopped
  • 1/4 cup Cilantro chopped
  • 1 lime Juice freshly squeezed
  • 1 teaspoon Cumin
  • 1 teaspoon Salt to taste
Taco Shells
  • 8 small Corn Tortillas

Method
 

Prepare the Filling
  1. In a mixing bowl, combine diced avocados, black beans, corn, cherry tomatoes, red onion, cilantro, lime juice, cumin, and salt. Gently mix until well combined.
Assemble the Tacos
  1. Warm the corn tortillas in a skillet over medium heat for about 30 seconds on each side.
  2. Spoon the avocado and black bean mixture onto each tortilla.
  3. Serve immediately, garnished with extra cilantro if desired.
