Apricot Jam

Ingredients
  

Fruits
  • 2 cups fresh apricots pitted and chopped
Sugar
  • 1 cup granulated sugar
Acid
  • 2 tablespoons lemon juice freshly squeezed
Pectin
  • 1 package pectin for jam making

Method
 

Prepare the Apricots
  1. Wash, pit, and chop the apricots into small pieces.
Cook the Jam
  1. In a large pot, combine the chopped apricots, sugar, and lemon juice. Stir well.
  2. Bring the mixture to a boil over medium heat, stirring frequently.
  3. Once boiling, add the pectin and continue to boil for 1-2 minutes, stirring constantly.
Jar the Jam
  1. Remove the pot from heat and skim off any foam that has formed on top.
  2. Using a canning funnel, pour the hot jam into sterilized jars, leaving about 1/4 inch of headspace.
  3. Seal the jars with lids and allow to cool completely at room temperature.
