Base Ingredients
  • 1 cup dried apricots chopped
  • 1 cup unsweetened shredded coconut
  • 1 cup oats rolled
  • 1/2 cup almond flour
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil melted
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a mixing bowl, combine the chopped apricots, shredded coconut, oats, almond flour, honey, melted coconut oil, vanilla extract, and salt.
  3. Mix well until all ingredients are fully incorporated.
  4. Press the mixture firmly into the prepared baking dish.
  5. Bake in the preheated oven for 20-25 minutes or until golden brown.
  6. Allow to cool completely before cutting into bars.
