Prepare the Mixture
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine chopped dried apricots, rolled oats, shredded coconut, honey, almond butter, and salt.
- Mix until well combined.
Bake the Bars
- Press the mixture evenly into a greased baking dish.
- Sprinkle the additional shredded coconut on top.
- Bake for 25 minutes or until golden brown.
- Allow to cool before cutting into bars.
