Ingredients
  

Base
  • 1 cup dried apricots chopped
  • 1 cup rolled oats
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup honey
  • 1/4 cup almond butter
  • 1/4 teaspoon salt
Topping
  • 1/4 cup unsweetened shredded coconut for topping

Method
 

Prepare the Mixture
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine chopped dried apricots, rolled oats, shredded coconut, honey, almond butter, and salt.
  3. Mix until well combined.
Bake the Bars
  1. Press the mixture evenly into a greased baking dish.
  2. Sprinkle the additional shredded coconut on top.
  3. Bake for 25 minutes or until golden brown.
  4. Allow to cool before cutting into bars.
