Preparation
- Line a baking dish with parchment paper, leaving some overhang for easy removal.
- In a food processor, combine the dried apricots, cashews, rolled oats, honey, coconut flakes, and salt.
- Pulse until the mixture is well combined and sticky, scraping down the sides as needed.
- If using, add chia seeds and dark chocolate chips, and pulse a few more times to incorporate.
- Transfer the mixture to the prepared baking dish and press it down firmly into an even layer.
- Refrigerate for at least 1 hour to set.
- Once set, lift the bars out using the parchment overhang and cut into squares or rectangles.
