Ingredients
  

Pasta
  • 8 oz rotini pasta or any short pasta
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup bell pepper diced
  • 1/2 cup red onion finely chopped
Proteins
  • 1 cup salami sliced
  • 1 cup mozzarella cheese cubed
  • 1/2 cup black olives sliced
Dressing
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Italian seasoning
  • 1 clove garlic minced

Method
 

Prepare the Pasta
  1. Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water.
Mix Ingredients
  1. In a large mixing bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell pepper, red onion, salami, mozzarella cheese, and black olives.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, minced garlic, salt, and black pepper.
Combine and Serve
  1. Pour the dressing over the pasta salad and toss to combine. Adjust seasoning if necessary. Serve chilled or at room temperature.
